Crab Salad

I lb Byrd Super Lump or Jumbo Lump crab meat
½ cup finely chopped red onion
½ cup finely chopped sweet red pepper
2 tbs mayonnaise
2 tbs sour cream
1 tbs yellow mustard
1 tbs parsley
1 tsp Old Bay seafood seasoning (more to taste)
2 tsp lemon juice


Thoroughly combine all ingredients except crab meat. Gently fold in crab meat.

Serving tips: serve on a bed of lettuce on a salad plate. Can be accompanied by sliced avocado or cherry tomatoes with saltine crackers. Or, create a crab meat cocktail by lining the sides of a martini glass with two stalks of romaine lettuce and fill with crab salad.
