Byrd Crab Cakes

1 lb Byrd crab meat
¾ cup crushed Ritz crackers or bread crumbs
1 egg
½ cup sautéed chopped red pepper (optional)
3 Tbs mayonnaise
1 Tbs Worcestershire sauce
2 tsp Old Bay seafood seasoning (to taste)
1 tsp dry mustard
2 tsp lemon juice
2 tsp prepared mustard
2 tsp parsley
Hot sauce to taste


Thoroughly mix all ingredients other than bread crumbs and crab meat. Gently mix in crab meat. Blend in bread crumbs. Shape in to patties. Byrd crab cakes are easier to handle if the mix is refrigerated at least ½ hour prior to shaping.
